I didn’t get through all my vegetables last week, so I’m going to have to get through these ones quick. I want to get through the salad as quick as possible, and later in the week I’m going to roast last week’s radishes and use the daikon and green onion in a morning bowl of saimin. I’m only using Top Ramen, but does anyone suggest anything else with a comparable cooking time and somewhat economical (not Top Ramen cheap, but under $2 a pack)? Later on in the week, I’m going to cook up the Rainbow chard with some eggs and make and omelette/scramble. The eggplant will go in a pasta, although I briefly entertained the idea of making baba ghanoush. I think I need a bigger food processo if I want to go there. The kalua pig and collard greens takes minutes to prepare (considering I use the pre-packaged kalua pig) and then I’m going to eat the pak choi or some tofu if I get around to buying some. I’m never really sure what to do with the lemons, but maybe I should just make lemonade?
